Vegan Dave's Jackfruit Jambalaya Pot
Wondering how to buy Jackfruit and use it for an easy, amazing recipe? Buy it in the can from your local Asian market or health food store (or Amazon) and throw everything in a pot Jambalaya style!
I popped on a livestream video with Vegan Dave in his private Facebook Group Go Vegan With Dave's Vegan Adventures and Dave made this basic "Forks Over Knives" recipe even better by adding more tomatoes, more broth, more rice and more heat, as follows! Vegan Cooking Level: Beginner
Ingredients
1 cup finely chopped green or red bell pepper
1 medium onion, finely chopped
2 stems finely chopped celery
3 cloves garlic, minced
1 bay leaf
2 1/2 cups veggie broth (or water)
1 28 oz. oz. can diced tomatoes, with juice
1 15 oz. can Jackfruit (in water brine), drained, rinsed and chopped finely
1 15 oz. can red kidney beans, rinsed and drained
3 cups cooked brown rice
1 tbsp. creole seasoning
¼ tsp. Cayenne pepper
1 fresh lemon, juiced
Sea salt & freshly ground black pepper to taste
How To
Step 1: In a dutch oven, cook pepper, onion, celery, garlic, bay leaf in a bit of water over medium heat for 10 min or until onion is translucent.
Step 2: Add veggie broth, tomatoes, jackfruit, beans, rice and spices. Bring to boil and reduce heat. Simmer covered 20-30 min or until jambalaya thickens, stirring occasionally.
Step 3: Season with salt and pepper, the lemon juice and serve!
