BEST Instant Pot Split Pea & Butternut Soup
Another one-pot wonder: Just put everything in your Instant Pot and dinner is done!

Split Pea & Butternut Soup Ingredients
2 cups dry split peas, rinsed
1 yellow onion, diced
2 cloves garlic, grated
2 ribs celery, diced
half regular raw butternut squash, 1-in. dice
1 large potato, peeled, 1-in. dice
3 cups chopped kale or spinach
1 tsp. oregano
1/2 tsp. ground cumin
1/4 tsp. ground celery seed
1 tsp. salt
1/2 tsp. pepper
1 tsp. garlic powder
6 cups water
How-To
Step 1: Place all ingredients into your 6-quart Instant Pot (except spinach, if using spinach, will be added AFTER cooking and any blending).
Step 2: Place the lid and vent in the sealed position. Press manual/pressure cook and set to 17 minutes.
Step 3: When done, use a quick release and open your pot. Use an immersion blender to gently pulse around the pot until you reach your desired consistency. Then add spinach if using.
Notes
-Serve with a shot of any hot pepper spice blend you love such as a Berbere or a Shawarma!
-Substitute a large yam or sweet potato for the butternut,
