Crunchy Air-Fried Black Bean Flautas

Love that crunchy comfort of fried tortilla dishes you might have had at restaurants in the past? Well, I have nailed this down using my air fryer and a few very simple ingredients you probably have on hand all the time. And check out this easy enchilada sauce below, which you can whip up while the flautas are air-frying!

Vegan Cooking Level: Beginner

Ingredients

1 can black beans, drained

1/2 cup salsa

6+ round corn tortillas

1/4 cup red onions, sliced thinly

1 lime, juiced

left-over rice, room temperature

Enchilada Sauce

1.5 cups veggie broth

2 tbsp. tomato paste

2 tbsp. garbanzo (chickpea) flour

2 tbsp. nutritional yeast

2 tbsp. plant milk

1 tsp. cumin

1 tsp. garlic powder

1/2 tsp. smoked paprika

1/2 tsp. onion powder

1/2 tsp. salt

1/2 tsp. pepper

1/4 tsp oregano

optional: 1/4 tsp. or more cayenne pepper

How to roll these up

Step 1: Slice onions and combine in a bowl with lime and stir to combine.

Step 2: Combine beans and salsa in a processor and pulse just to combine and mash most of the beans but not all, resulting in a chunky mix.

Step 3: Layer as shown in a corn tortilla: base of bean mixture, topped with spoonful of rice and topped with onion mixture. Do not stuff! Roll over (with open sides) as tightly as possible and lay seam side down in the air fryer basket. Make as many as fit at one time in your air fryer basket. (If you are using a basket style airfryer only, line with parchment.)

Step 4: Set your air fryer to 350 degrees F and set timer to 10 minutes. Check at 7-8 minutes for doneness. You can also bake at 350 degrees F on a parchment-lined (or silpat) cookie sheet for about 15-20 min, or until browned, as shown (brown means CRUNCHY!)

Step 5: While that's cooking, whip up the sauce. Combine garbanzo flour and milk and whisk in a small bowl and set aside. Then, combine all the rest of the ingredients and heat in a saucepan. Once hot, add the creamy garbanzo mixture and whisk. Taste and adjust the seasonings how you like it.

Recipe makes about 10 - depending how you stuff them - but FYI, 10 does not fit in the air fryer all at one time. Bean mix and sauce keeps great separately in the fridge for making more another day. Serve with corn on the cob and other veggies to make it a meal or just make a snack/appetizer serving with just the sauce!
