This is the marriage of two of my favorite recipes: My Oil-Free Vegan Asian Slurpy Slaw & Massaged Kale with my favorite slurpy, completely fat-free dressing. It makes for the most delightful and the most nutritious bowl!
Vegan Cooking Level: Medium
3-4 cups fresh chopped kale
1/2 cup frozen peas or edamame, thawed
3 scallions, chopped
1 cup shredded or thinly sliced cabbage
1 carrot, shredded
1 cup any rice or other grain you love
3 tbsp. tamari (soy sauce or liquid aminos)
1 tbsp. maple syrup
Juice of 1 lime
1/2" nub ginger, shredded
1 clove garlic, shredded
Massage the Kale
Like so, if this is your first time, you can watch me explain and demonstrate how to massage kale and how I sprinkle on the dressing in this quick fun video!
Mix up the dressing
Whisk or mix in a small jar. This recipe can be doubled and quadrupled to make more to save in the fridge in the jar. OR, once you've made this once, you can just eyeball these ingredients and shake them straight into your bowl with the veggies and mix to serve, like I did in the video. For an even quicker prep, use 1/2 tsp. ginger powder and 1/2 tsp garlic powder instead of the fresh.
Hit it with a tbsp. sesame seeds and a shot of Sriracha if you like the heat!
